I’ve got a recipe that captures all that magic in individual, adorable cups, without even needing to turn on your oven! These No-Bake Cookies and Cream Dessert Cups are seriously one of the easiest, quickest, and most crowd-pleasing treats you’ll ever make. They're perfect for impromptu gatherings, a special weeknight dessert, or when you just need a little sweet pick-me-up.

Ingredients
  

  • 2 cups chocolate sandwich cookies crushed
  • 1/4 cup butter melted
  • 8 oz cream cheese room temperature
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1.5 cups heavy cream
  • 1/2 cup chocolate sandwich cookies crushed
  • 28 mini chocolate sandwich cookies

Instructions
 

  • Step 1: In a small bowl, combine 2 cups of crushed chocolate sandwich cookie crumbs with the melted butter. Stir until all crumbs are evenly coated and look like wet sand.
  • Step 2: Portion the crumb mixture into the bottom of 2-ounce plastic cups using a small cookie scoop or spoon. Use another empty plastic cup to firmly press the crumbs into a nice, even layer at the bottom for a sturdy crust.
  • Step 3: In a separate mixing bowl, add room-temperature cream cheese and granulated sugar. Using an electric hand mixer on medium speed, cream them together until beautifully combined and smooth.
  • Step 4: Pour in heavy cream and vanilla extract. Turn the mixer up to medium-high speed and whip the mixture until it’s light, fluffy, and holds soft peaks.
  • Step 5: Gently fold in the ½ cup of extra crushed chocolate sandwich cookie crumbs, just enough to evenly distribute them without overmixing.
  • Step 6: Pipe or spoon the cookies and cream mixture into each prepared cup until it’s approximately three-quarters full.
  • Step 7: Top each dessert cup with a mini chocolate sandwich cookie, or sprinkle with a few more cookie crumbs if preferred.
  • Step 8: Seal cups with a lid or cover tightly with plastic wrap. Pop them in the fridge to chill. They firm up beautifully and taste even better after a good chill (at least an hour). They’ll store well in the refrigerator for 2-3 days.

Notes

Make them your own by swapping cookie types (graham cracker crumbs, vanilla wafers, or shortbread) or adding flavor boosts like a pinch of instant espresso powder, a swirl of caramel or hot fudge sauce. For an adult version, add a splash of Kahlua or Irish cream liqueur. Garnish with chocolate shavings, chocolate syrup, whipped cream, or sprinkles. Ensure cream cheese is at room temperature for a lump-free filling and avoid over-whipping the cream. Press the crust firmly for a sturdy base. While delicious immediately, a good chill (at least an hour) allows the flavors to meld and the filling to firm up. These are fantastic for making ahead. Store covered in the refrigerator for up to 2-3 days; freezing is not recommended as it may alter the texture of the cream cheese filling.
