Bourbon-Maple Brisket Grilled Cheese Wafflewich

This recipe elevates the classic grilled cheese to a new level with bourbon-maple brisket and waffles. It's a surprisingly easy and impressive comfort food, perfect for lazy Sundays or special occasions.

  • 1 lb brisket choose a good quality one
  • 1 cup bourbon a good quality bourbon will enhance the flavor
  • 0.5 cup maple syrup the real stuff, please!
  • 8 slices bread your favorite hearty bread works best
  • 2 cups shredded cheddar cheese sharp cheddar is my personal favorite
  • 4 waffles store-bought or homemade
  • Butter unsalted, for best flavor control

Instructions
 

  • Slow cook the brisket: Place the brisket in a slow cooker, pour in the bourbon and maple syrup, and cook on low for 8 hours, or until the brisket is incredibly tender and easily shreds with a fork. Check around the 7-hour mark.
  • Shred the brisket: Once cooked, let it cool slightly, then shred it with two forks. Set aside.
  • Butter the bread: Butter one side of each bread slice.
  • Make the grilled cheese: Place a buttered bread slice in a skillet over medium heat. Top with cheddar cheese, shredded brisket, and another bread slice (buttered side up). Cook until golden brown and the cheese is melted, flipping halfway through. Repeat.
  • Heat the waffles: Heat your waffles according to package directions.
  • Assemble the Wafflewich: Place a grilled cheese sandwich between two warm waffles.
  • Serve immediately.

Notes

Feel free to experiment with different cheeses, add spices, or include bacon or caramelized onions. Leftover brisket can be stored for up to 3 days, while Wafflewiches are best enjoyed fresh.
