Equipment

  • Blender
  • Serving Glass

Ingredients

  • 1 cup cubed watermelon ripe, sweet
  • 1 cup white rum good quality; omit for mocktail
  • 1 cup ice cubes
  • 2 cups cubed pineapple fresh or frozen
  • 2 tbsp fresh lime juice freshly squeezed
  • fresh watermelon wedge for garnish
  • small pineapple slice for garnish

Instructions

  • Step 1: For the pineapple layer, combine 2 cups of cubed pineapple, 2 tablespoons of fresh lime juice, half a cup of white rum, and half a cup of ice cubes in your blender. Blend until beautifully smooth and creamy. Carefully pour this vibrant pineapple goodness into the bottom of your serving glass.
  • Step 2: Give your blender a quick rinse. For the watermelon layer, add 1 cup of cubed watermelon, the remaining half cup of white rum, and the remaining half cup of ice cubes to the clean blender. Blend again until it's wonderfully smooth and frosty.
  • Step 3: Carefully layer the watermelon mixture over the pineapple mixture in your glass. The contrast in colors is stunning.
  • Step 4: To make it extra special, garnish with a fresh watermelon wedge and a small pineapple slice. Serve it up immediately and enjoy!

Notes

Substitutions & Additions: Omit rum for a mocktail. Use frozen fruit for a thicker, colder daiquiri (you might need more liquid). Add a tiny sliver of jalapeño for a kick, or a few fresh mint or basil leaves for an herbaceous twist. Swap fruits with strawberries, mango, or peaches. If fruit isn't sweet enough, add 1-2 tsp of simple syrup, agave nectar, or honey. For a piña colada-esque twist, add 1 tbsp of coconut cream to the pineapple layer.
Tips for Success: Choose ripe fruit for natural sweetness. Don't over-blend to keep it frosty. Adjust ice to preference for desired thickness. Chill serving glasses in the freezer for 15-20 minutes for an extra frosty experience. Always taste and adjust before serving.
Storage: Best enjoyed fresh. Leftovers can be stored in an airtight container in the freezer for 1-2 weeks. Re-blend with more ice and a splash of rum or lime juice to revive texture.
