  • 1 large ripe red-fleshed dragon fruit about 1 to 1.5 cups scooped flesh
  • 4-6 large juicy lemons to yield 1 cup fresh lemon juice

Sweetener Options

  • 3/4 cup granulated sugar up to 1 cup, for simple syrup
  • 1/2 cup agave nectar or maple syrup up to 3/4 cup, alternative liquid sweetener

  • 1/2 cup water for simple syrup (if using sugar)

Instructions
 

  • Step 1: Prepare the Dragon Fruit Purée: Give your dragon fruit a quick wash. Slice it in half lengthwise. Use a spoon to scoop out the flesh. Dice up the scooped flesh – you’ll want about 1 to 1.5 cups. Pop the diced dragon fruit into your blender along with about 1/4 cup of your cold filtered water. Blend it until it's super smooth and creamy. Optional: Pour the purée through a fine-mesh sieve for an extra silky, seedless texture.
  • Step 2: Juice Those Lemons: Wash your lemons and roll them firmly on the counter. Cut them in half and juice them until you have a full cup of fresh lemon juice. Strain out any seeds or big bits of pulp if you like.
  • Step 3: Make the Simple Syrup (If Using Granulated Sugar): If you're using agave or maple syrup, skip this step. If using sugar, grab a small saucepan. Pour in the 3/4 cup sugar and 1/2 cup water. Heat it over medium heat, stirring constantly, until all the sugar is completely dissolved and the liquid is clear (just a few minutes). Remove from heat and let cool slightly.
  • Step 4: Combine the Ingredients: Get out your biggest pitcher. Pour in the dragon fruit purée and the cup of fresh lemon juice. Give it a good stir. Now add your chosen sweetener. If you made simple syrup, pour that in once cooled. If using agave or maple syrup, add 1/2 to 3/4 cup. Stir everything really well until the sweetener is fully incorporated. Finally, pour in the remaining cold filtered water (about 3 3/4 cups). Stir until beautifully combined.
  • Step 5: Taste and Adjust: Take a sip. Adjust the sweetness and tartness to your preference by stirring in a little more simple syrup/liquid sweetener, or a little extra lemon juice or water, tasting as you go.
  • Step 6: Chill Thoroughly: Cover your pitcher and pop it in the refrigerator. Let it chill for at least 1-2 hours to allow flavors to meld and ensure it's perfectly cold.
  • Step 7: Serve! Give the lemonade a quick stir before serving. Fill glasses generously with ice. Pour the chilled lemonade over the ice. Add any optional garnishes you like – a lemon slice, a mint sprig, or a little dragon fruit ball makes it extra special.

Notes

Substitutions & Additions: Experiment with honey or a sugar substitute as sweeteners. Use sparkling water or club soda for a bubbly spritzer (add before serving).
