This recipe takes nostalgic sloppy joes and gives them a fun, fiesta-worthy upgrade! These Sloppy Joe Grilled Burritos are unbelievably easy, incredibly satisfying, and ready in under 30 minutes.

  • 2 pounds lean ground beef I prefer 90/10 for the best flavor and texture
  • Salt and pepper to taste (Don't be shy with the seasoning!)
  • 2 tbsp chopped onion Adds a touch of sweetness
  • 2 tbsp chopped red bell pepper For a pop of color and flavor
  • 2 tbsp chopped green bell pepper More vibrant flavor
  • 0.5 cup ketchup The classic sloppy joe base
  • 3 tbsp Worcestershire sauce Adds a savory depth
  • 2 tsp light brown sugar Balances the acidity of the ketchup
  • 1 tsp onion powder Enhances the onion flavor
  • 2 cups shredded Cheddar cheese For the cheesy filling
  • 0.33 cup milk Creates a creamy cheese sauce
  • 1 tbsp butter For richness in the cheese sauce
  • 1 cup shredded Cheddar cheese For sprinkling on top – extra cheesy goodness!
  • Large tortillas Burrito size, your favorite kind!
  • 3 tbsp oil For frying the burritos – vegetable or canola work great

Instructions
 

  • Brown the ground beef in a large skillet over medium-high heat. Add the onions and bell peppers; season with salt and pepper. Cook until the vegetables are tender, about 5-7 minutes. Drain off any excess grease.
  • In a small bowl, whisk together the ketchup, Worcestershire sauce, onion powder, and brown sugar. This is your amazing sloppy joe sauce!
  • Pour the sauce mixture over the beef and vegetables in the skillet. Stir well to combine and heat through.
  • In a separate saucepan, melt the butter over low heat. Stir in the shredded cheese and milk until smooth and creamy. This is your cheesy goodness sauce!
  • Heat the oil in a clean skillet over medium heat.
  • Place a spoonful of the sloppy joe mixture and a spoonful of the cheese sauce onto the center of each tortilla. Roll them up tightly!
  • Carefully place the burritos seam-side down in the hot oil and cook for 1-2 minutes per side, or until golden brown and crispy.
  • Remove the burritos from the skillet and drain them on paper towels to absorb any excess oil.
  • Sprinkle with the extra shredded cheddar cheese and serve immediately. Enjoy!

Notes

Feel free to get creative! Cheese Swap: Monterey Jack, pepper jack, or a Mexican blend would all be delicious. Spice it Up: Add a pinch of chili powder or a dash of your favorite hot sauce to the sloppy joe mixture for a kick. Veggie Boost: Throw in some chopped mushrooms or zucchini with the peppers. Bean There, Done That: Add a can of drained and rinsed kidney beans or black beans to the sloppy joe mixture for extra protein and fiber. Don't overcrowd the skillet when frying the burritos; work in batches to ensure even browning. For extra crispy burritos, you can even broil them for a minute or two after frying. Prep ahead! You can make the sloppy joe mixture and the cheese sauce a day in advance and store them separately in the refrigerator. Leftover burritos can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave. They’re also delicious cold!
