  • 1/4 cup unsalted butter softened
  • 1 clove garlic minced
  • 1/2 tsp dried oregano
  • 8 slices sturdy bread like sourdough or Texas toast
  • 1 cup shredded mozzarella cheese shredded
  • 1/2 cup sliced pepperoni sliced
  • 1/4 cup pizza sauce

Instructions
 

  • Step 1: In a small bowl, mix together the softened unsalted butter, minced garlic, and dried oregano until well combined. This is your garlic butter.
  • Step 2: Lay out the 8 slices of bread. Spread the garlic butter evenly over one side of each slice.
  • Step 3: Heat a large non-stick skillet or griddle over medium heat.
  • Step 4: Place four of the bread slices into the pan, butter-side down. These will be the bottoms of your sandwiches.
  • Step 5: On each of the four slices in the pan, spread about 1 tablespoon of the pizza sauce.
  • Step 6: Layer half of the shredded mozzarella cheese over the pizza sauce on each slice.
  • Step 7: Distribute the sliced pepperoni evenly over the cheese.
  • Step 8: Add the remaining shredded mozzarella cheese right on top of the pepperoni.
  • Step 9: Take the remaining four slices of bread and place them on top of the fillings, with the buttered side facing up.
  • Step 10: Cook for about 4-6 minutes per side, until the bread is golden brown and the cheese is completely melted and gooey. Gently press down with a spatula occasionally.
  • Step 11: Carefully remove sandwiches from the skillet. Let them rest for a minute before slicing in half.
  • Step 12: Serve hot.

Notes

Cook on medium heat to prevent burning before the cheese melts. Don't overstuff the sandwiches, as this can make them hard to cook evenly. Use soft butter for easy spreading. Press gently with a spatula for even browning and faster melting. You can make the garlic butter ahead of time and store it in the fridge; let it soften slightly before use. Store leftovers wrapped tightly in the refrigerator for 2-3 days. Reheat in a skillet over medium-low heat or in an air fryer for best results (avoid microwaving to keep the crisp texture).
