Ingredients
  

  • 1 lb lean ground beef lean helps keep things less greasy, but any ground beef will do
  • 1 cup nacho cheese sauce your favorite jarred kind or homemade
  • 1/2 cup sour cream
  • 1 can Rotel diced tomatoes with green chilis, drained well
  • 1 green bell pepper chopped
  • 1 small onion diced
  • 1 packet taco seasoning mix
  • 1 cup crushed Nacho Cheese Doritos
  • 4 large flour tortilla wraps
  • 1 cup shredded lettuce for serving

Instructions
 

  • Step 1: Grab your trusty skillet and place it over medium-high heat. Toss in your lean ground beef and cook until beautifully browned. Drain off any excess fat.
  • Step 2: Add diced onions and chopped green bell peppers to the skillet with the beef. Sauté for about 4 minutes, stirring occasionally, until slightly softened.
  • Step 3: Stir in your taco seasoning mix. Let it simmer with the beef and veggies for 1–2 minutes, allowing the spices to meld.
  • Step 4: In a separate bowl, combine the nacho cheese sauce and your drained Rotel. Stir until you have a smooth, vibrant, and slightly spicy cheese mixture.
  • Step 5: Lay large flour tortillas on a flat surface. Spread a generous line of your cheese-Rotel mixture down the center of each tortilla. Pile on a good portion of your seasoned beef mixture. Add a dollop of sour cream and sprinkle a handful of crushed Nacho Cheese Doritos on top.
  • Step 6: Carefully fold in the sides of each tortilla, then roll it up tightly from the bottom for a snug wrap.
  • Step 7: Place each rolled-up wrap in a clean skillet. Toast over medium heat until golden brown and wonderfully crispy on both sides, usually 2–3 minutes per side.

Leftovers can be stored in an airtight container for 2-3 days; reheat in a skillet or air fryer for best crispiness.
