Ingredients
  

  • 1 lb ground beef 85% lean; ground turkey or chicken works too!
  • 1 medium yellow onion diced
  • 1 tablespoon olive oil
  • 1 red bell pepper diced
  • 1 15 ounce can tomato sauce
  • 1 15 ounce can chili beans undrained
  • 1 teaspoon chili powder adjust to your spice preference!
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese feel free to mix in some Monterey Jack for extra meltiness
  • 1 32 ounce bag frozen tater tots
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Step 1: Preheat your oven to a cozy 375°F (190°C).
  • Step 2: Grab a large skillet and heat your olive oil over medium heat. Toss in your ground beef and diced onion. Cook until the beef is beautifully browned and the onion is soft and translucent, breaking up that beef as it cooks. Once it’s done, drain off any excess grease.
  • Step 3: Stir in your diced red bell pepper, tomato sauce, undrained chili beans, chili powder, garlic powder, and a good sprinkle of salt and pepper. Bring this mixture to a gentle simmer and let it cook for about 10 minutes, stirring occasionally. This allows all those wonderful flavors to meld together.
  • Step 4: Spoon the glorious beef mixture evenly into your trusty 9x13 inch baking dish.
  • Step 5: Dollop spoonfuls of sour cream over the beef mixture.
  • Step 6: Generously sprinkle all that shredded cheddar cheese right over the sour cream.
  • Step 7: Finally, arrange your frozen tater tots in a single, even layer over the cheese. Think of them as tiny, crispy golden nuggets waiting to shine!
  • Step 8: Pop your casserole into the preheated oven. Let it bake for 30-40 minutes. You’re looking for those tater tots to be perfectly golden brown and crispy, and the cheese underneath to be wonderfully melted and bubbly.
  • Step 9: Once it’s out of the oven, sprinkle some fresh chopped parsley over the top. Let it cool for just a few minutes, then dig in!
