This Ham and Cheese Croissant Breakfast Casserole is unbelievably simple, requires minimal prep, and is guaranteed to be a crowd-pleaser for brunch, holidays, or any time you crave a comforting and delicious breakfast.

  • 6 large croissants, cut into pieces I prefer buttery croissants for maximum flavor!
  • 2 cups diced ham deli ham works perfectly
  • 2 cups shredded cheddar cheese sharp cheddar is my go-to, but you can use your favorite!
  • 6 large eggs the base of our creamy custard
  • 2 cups milk whole milk adds richness, but any kind will work
  • 1 teaspoon Dijon mustard adds a tangy kick!
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup chopped chives optional, but adds a fresh pop of color and flavor

Instructions
 

  • Grease a 9x13-inch baking dish. Arrange the croissant pieces evenly in the dish. This is your base layer of deliciousness!
  • Sprinkle the diced ham and shredded cheese over the croissants. Don't be shy with the cheese!
  • In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper until well combined. This is your creamy custard.
  • Pour the custard mixture evenly over the croissant, ham, and cheese layers. Gently press down to submerge the croissants slightly.
  • Cover the baking dish and refrigerate for at least 2 hours, or preferably overnight. This allows the croissants to absorb the custard and prevents a soggy bottom.
  • Preheat your oven to 350°F (175°C). Let the casserole sit at room temperature for about 15 minutes while the oven heats up.
  • Bake uncovered for 40-45 minutes, or until the casserole is golden brown and the custard is set. You'll know it's ready when a knife inserted into the center comes out clean.
  • Let the casserole cool slightly before slicing. Garnish with fresh chives (if using) and serve warm. Enjoy!

Notes

Don't skip the refrigeration step! It helps the croissants absorb the custard and prevents a soggy bottom. For easier cleanup, line your baking dish with parchment paper. If you’re short on time, you can bake the casserole without refrigerating it, but it might be slightly less flavorful and potentially a bit soggy. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until warmed through.
