Ingredients
  

  • 4 cups sweet corn fresh, canned (drained and rinsed), or thawed frozen
  • 1 cup cherry tomatoes halved; grape tomatoes also work
  • 1 cup cucumber diced
  • 1 bell pepper diced (red, yellow, or green)
  • 0.5 red onion finely chopped
  • 0.25 cup cilantro chopped
  • 0.25 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp lime juice freshly squeezed is best
  • 1 tsp sugar
  • salt to taste
  • black pepper to taste

Instructions
 

  • Step 1: Prepare the Corn: If using fresh corn on the cob, quickly blanch it in boiling water for 3-5 minutes, then drain and let it cool. Carefully cut the kernels from the cob. If using canned corn, simply rinse and drain it well. If using frozen corn, ensure it's fully thawed and drained.
  • Step 2: Chop the Vegetables: Dice your cucumber and bell pepper into bite-sized pieces. Halve the cherry tomatoes. Finely chop the red onion.
  • Step 3: Combine Salad Ingredients: In a large mixing bowl, combine the prepared corn, halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, and chopped fresh cilantro.
  • Step 4: Make the Dressing: In a smaller bowl, whisk together the olive oil, apple cider vinegar, lime juice, sugar, salt, and pepper until everything is nicely combined and the sugar has dissolved.
  • Step 5: Dress and Marinate: Pour the dressing over the corn and vegetable mixture. Gently toss everything together, ensuring every piece is coated. For the best flavor, let the salad sit for at least 10 minutes in the refrigerator to allow the flavors to meld.
  • Step 6: Taste and Serve: Before serving, taste and adjust seasoning (salt, pepper, sugar) to your liking. Transfer to a beautiful serving bowl or platter and serve immediately.

This adaptable corn salad welcomes additions like diced avocado, fresh parsley, finely diced jalapeño or hot sauce for a kick, black beans, grilled chicken or shrimp to make it a light meal, or crumbled feta or cotija cheese. For best results, use well-drained corn (fresh, canned, or thawed frozen), allow at least 10-15 minutes of chill time for flavors to deepen, and don't over-dress the salad. You can chop all vegetables and whisk the dressing ahead of time, storing them separately in the fridge, then combine and dress about an hour before serving for peak freshness. Store any leftovers in an airtight container in the refrigerator for 3-4 days; the flavors will often deepen, making it a delicious next-day lunch.
