Strawberry Pineapple Mojito

A delightful tropical twist on the classic mojito, this refreshing cocktail combines fresh mint, lime, white rum, sweet strawberries, and tangy pineapple, topped with bubbly club soda. Perfect for a hot day or a backyard gathering.

Ingredients
  

  • 6–8 Fresh mint leaves
  • 4 Fresh strawberries hulled and chopped
  • 1/4 cup Fresh pineapple chopped
  • 1.5 oz White rum
  • 1 oz Fresh lime juice about 1 lime
  • 1 tbsp Simple syrup adjust to taste
  • Club soda to top, or sparkling water
  • Ice cubes

For Garnish

  • Extra mint
  • Strawberry slices
  • Lime wedge

Instructions
 

  • Step 1: Get muddling: Grab a sturdy glass or cocktail shaker. Add fresh mint leaves, chopped strawberries, and chopped pineapple. Gently muddle (press and twist) a few times to release juices and oils.
  • Step 2: Add the liquids: Pour in the white rum, fresh lime juice, and simple syrup.
  • Step 3: Shake it up (or stir!): If using a shaker, fill with ice and shake vigorously for 15-20 seconds. If making directly in the glass, add ice and stir until well chilled.
  • Step 4: Strain or Pour: If using a shaker, strain into a tall glass filled with fresh ice. If made in the glass, continue to the next step.
  • Step 5: Top it off: Pour club soda over the top until the glass is full. Give a gentle stir to combine.
  • Step 6: Garnish and Enjoy! Add extra mint sprigs, strawberry slices, and a lime wedge. Serve immediately.

Notes

Don't over-muddle the mint to avoid bitterness. Use fresh mint and lime juice for the best flavor. Adjust simple syrup to your sweetness preference based on fruit ripeness. Prepare simple syrup ahead of time and store in the fridge. Use plenty of ice for chilling and serving. While finished drinks are best fresh, you can prep simple syrup and chopped fruit/mint ahead of time and store separately in the fridge. For a big batch, muddle fruit/mint/lime/syrup base ahead, but add rum and club soda to individual glasses just before serving.
