Instructions
Preheat oven to 350°F (175°C). Lightly grease a 9×13 baking dish.
Brown ground beef in a large skillet over medium heat. Drain excess grease.
Add onion and garlic to the beef and cook until softened and fragrant.
Stir in cabbage, diced tomatoes, beef broth, salt, pepper, paprika, and thyme. Mix well and simmer 5 minutes.
Transfer mixture to baking dish, cover with foil, and bake for 45 minutes.
Remove foil, sprinkle cheese on top, and return to oven for 10–15 minutes until melted and bubbly.
Let rest 5–10 minutes before serving.
Notes
Add bell peppers or carrots for extra vegetables. Ground turkey or sausage may be substituted for beef. Pepper jack cheese adds a spicy twist.
