Ingredients
  

For the Easter Sprinkle Cookies

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup Easter sprinkles pastel jimmies or confetti sprinkles

Instructions
 

  • Step 1: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • Step 2: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • Step 3: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2–3 minutes.
  • Step 4: Add the egg and vanilla extract, mixing until smooth and well combined.
  • Step 5: Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
  • Step 6: Gently fold the Easter sprinkles into the dough until evenly distributed.
  • Step 7: Scoop about 1 tablespoon of dough and roll into balls. Place them on the prepared baking sheet about 2 inches apart.
  • Step 8: Bake for 10–12 minutes until the edges are lightly golden while the centers remain soft.
  • Step 9: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 20 minutes before baking. Avoid nonpareil sprinkles as their colors can bleed into the dough.
