Instructions
Step 1:
In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.
Step 2:
In another bowl, beat the softened cream cheese until smooth. Gradually fold in the whipped cream mixture until fully combined.
Step 3:
Divide the mixture in half. In one half, add the green food coloring and mix until evenly colored.
Step 4:
In the second half, fold in the mint chocolate chips and mini marshmallows.
Step 5:
In the graham cracker crust, alternate layers of the green mixture and the mint chocolate chip mixture, creating a swirl effect.
Step 6:
Cover and refrigerate for at least 4 hours or until set.
Step 7:
Slice and serve chilled.
Notes
Chill the pie overnight for best results. You can substitute the mini marshmallows with whipped topping for a lighter texture.
