  • 2 large sweet potatoes washed, peeled, and sliced into ½-inch rounds
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika optional
  • 4 oz feta cheese crumbled
  • 2 tbsp honey
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Step 1: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Step 2: Wash, peel, and slice sweet potatoes into ½-inch thick rounds.
  • Step 3: Place sweet potato rounds in a large bowl. Add olive oil, salt, black pepper, and smoked paprika if using. Toss gently to coat evenly.
  • Step 4: Arrange rounds in a single layer on the prepared baking sheet, ensuring they do not overlap.
  • Step 5: Roast for 25 to 30 minutes, flipping each round carefully halfway through to brown both sides evenly.
  • Step 6: Remove from oven and let cool for about 5 minutes.
  • Step 7: Transfer sweet potato rounds to a serving platter. Sprinkle crumbled feta evenly over the warm rounds.
  • Step 8: Drizzle honey evenly over the cheese-topped rounds.
  • Step 9: Garnish with chopped fresh parsley and serve immediately.

Notes

Store leftovers separately from toppings in an airtight container in the fridge for up to 3 days. Reheat in a 375°F oven for about 10 minutes to crisp. Add feta and honey fresh after reheating. Avoid microwaving to prevent sogginess. Substitute goat cheese, blue cheese, or mozzarella for feta. Use maple syrup for a vegan option. Add toasted nuts or spices like thyme, rosemary, cinnamon, or nutmeg for extra flavor.
