Equipment

  • 10-12 cup Bundt pan
  • Large mixing bowl
  • Electric mixer
  • Medium-sized bowl
  • Whisk
  • Wooden skewer or toothpick
  • Wire cooling rack
  • Oven mitts

Ingredients

For the Cake

  • 1.5 cups unsalted butter (3 sticks), softened, room temperature
  • 8 oz cream cheese softened
  • 3 cups granulated sugar
  • 6 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 0.5 cup crushed pineapple well-drained

For Caramelized Topping

  • 1 can pineapple slices (20 oz), drained
  • 0.5 cup unsalted butter melted
  • 0.5 cup packed light brown sugar

Instructions

  • Step 1: Preheat & Prepare: Preheat your oven to 325°F (160°C). Thoroughly grease a 10-12 cup Bundt pan using baking spray with flour, or butter and flour, to ensure a perfect release.
  • Step 2: Caramelize the Base: Pour ½ cup of melted butter and ½ cup of packed brown sugar into the prepared Bundt pan. Use a spoon or your fingers to spread it evenly across the bottom, creating a luscious, buttery caramel layer.
  • Step 3: Lay the Pineapple Love: Carefully arrange your drained pineapple slices over the butter and sugar mixture, forming a beautiful pattern on the bottom of the pan.
  • Step 4: Cream It Up: In a large mixing bowl, using an electric mixer, cream together the softened 1 ½ cups butter, softened cream cheese, and 3 cups granulated sugar until wonderfully light and fluffy.
  • Step 5: Egg-cellent Additions: Add the eggs one at a time, beating well after each addition until fully incorporated to keep the batter smooth and emulsified.
  • Step 6: Whisk the Dry: In a separate, medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt until evenly distributed.
  • Step 7: Combine Gently: Gradually add the dry ingredients to your wet ingredients, mixing on low speed until just combined. Do not overmix to avoid a tough cake.
  • Step 8: Fold in the Flavor: Gently stir in the vanilla extract and your well-drained crushed pineapple. Ensure as much liquid as possible is squeezed out of the pineapple.
  • Step 9: Fill the Pan: Carefully spoon the cake batter over your pineapple topping in the prepared pan. Spread it evenly for a uniform bake.
  • Step 10: Bake to Perfection: Bake for 75-90 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean. Monitor closely as oven temperatures vary.
  • Step 11: Cool Down: Once baked, let the cake cool in the pan for 15-20 minutes. This allows the caramelized topping to set and the cake to firm up for release.
  • Step 12: The Big Flip: Place a wire cooling rack or your serving plate over the top of the Bundt pan. Carefully invert the cake onto the rack or plate, so the pineapple side is now facing up and gleaming with caramel.
  • Step 13: Final Chill: Let the cake cool completely before slicing and serving for the best texture and flavor.

Notes

Substitutions & Additions: Add 1 teaspoon of orange or lemon zest to the batter for brightness. For crunch, fold in ½ cup of toasted chopped pecans or walnuts with the crushed pineapple. For a tropical vibe, add ½ cup of shredded coconut to the batter. A splash of rum or coconut liqueur (1-2 tablespoons) can add a sophisticated twist. A simple powdered sugar glaze (powdered sugar mixed with milk or pineapple juice) can be drizzled over the top once cool.
Tips for Success: Use room temperature butter and cream cheese for a smooth, airy base. Do not overmix the batter once flour is added to prevent a tough cake. Drain crushed pineapple thoroughly to avoid a gummy or improperly baked cake. Grease your Bundt pan in every crevice and dust with flour to prevent sticking. Allow the cake to cool in the pan for 15-20 minutes before inverting to ensure the topping sets and a clean release.
Storage: Covered tightly, the cake stays fresh at room temperature for 2-3 days. For longer storage, keep it in an airtight container in the refrigerator for up to a week; bring slices to room temperature before serving. This pound cake freezes beautifully: wrap individual slices or the entire cooled cake tightly in plastic wrap, then again in aluminum foil. It will keep in the freezer for up to 2-3 months. Thaw overnight in the refrigerator, then bring to room temperature before serving.
