Patriotic Keto Popsicles

These Red, White, and Blue Popsicles are incredibly easy to make, requiring minimal effort for maximum flavor and festive fun. Perfect for the 4th of July, a summer barbecue, or any day you need a delicious and healthy treat.

Ingredients
  

Red Layer

  • 0.5 cup fresh or frozen strawberries Fresh are best for vibrant color!
  • 2 tbsp water Just enough to help blend everything smoothly.
  • 1 tbsp powdered erythritol My favorite keto-friendly sweetener. You can adjust to your sweetness preference!

White Layer

  • 0.5 cup heavy whipping cream This gives the white layer its creamy texture.
  • 2 tbsp cream cheese softened - Make sure it’s really soft for easy blending!
  • 1 tbsp powdered erythritol Again, adjust to your taste.
  • 0.5 tsp vanilla extract A touch of vanilla enhances the creaminess.

Blue Layer

  • 0.5 cup fresh or frozen blueberries Frozen work perfectly, just make sure they're not rock hard.
  • 2 tbsp water To help with blending.
  • 1 tbsp powdered erythritol Sweetness to your liking!

Instructions
 

  • Red Layer: Combine strawberries, water, and erythritol in a blender. Blend until completely smooth. Let the mixture cool slightly. Spoon into your popsicle molds, filling them about ⅓ full. Freeze for 30-45 minutes, or until solid.
  • White Layer: In a separate bowl, beat the heavy cream, softened cream cheese, vanilla extract, and erythritol until smooth and creamy. Pour this mixture over the frozen red layer in your popsicle molds. Freeze for another 30-45 minutes.
  • Blue Layer: Blend blueberries, water, and erythritol until smooth. Let cool slightly. Gently pour this over the frozen white layer. Insert popsicle sticks into each mold. Freeze for at least 3-4 hours, or preferably overnight, to ensure they are completely frozen through.
  • Release & Serve: Once frozen solid, run the molds under warm water for a few seconds to help release the popsicles. Serve immediately and enjoy!

Notes

Feel free to experiment and make these your own! Substitutions: Sweetener: Monk fruit or stevia can be substituted for erythritol. Fruits: Get creative with other berries like raspberries or blackberries. Add-ins: A tiny pinch of chia seeds in the white layer adds a nice texture. A few drops of lemon extract will brighten the strawberry flavor.
