  • 10 ounces smoked sausage (Andouille or kielbasa), sliced into thin rounds
  • 4 ounces pasta (penne or rigatoni)
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion
  • 2 cups chicken broth (add more if needed)
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional
  • 1 cup fresh spinach optional
  • salt and pepper to taste
  • chopped parsley for garnish

Instructions
 

  • Step 1: Cook Sausage and Vegetables: Heat olive oil in a large skillet or pot over medium heat. Add sliced smoked sausage and brown thoroughly. Remove sausage and set aside, leaving browned bits and oil in the pot. Add diced bell peppers and onions to the same pot and sauté for 5-7 minutes until softened and fragrant.
  • Step 2: Create the Base: Sprinkle in Cajun seasoning, garlic powder, and cayenne pepper (if using). Stir with the sautéed veggies for about 1 minute. Pour in chicken broth and bring the mixture to a gentle simmer.
  • Step 3: Cook the Pasta: Add uncooked pasta directly into the simmering broth. Stir well to submerge. Cook, stirring occasionally, for 10-12 minutes, or until pasta is al dente. If it looks dry, add a splash more broth or water.
  • Step 4: Make the Creamy Sauce: Once pasta is cooked, lower the heat to a gentle simmer. Stir in heavy cream and shredded Parmesan cheese until melted and the sauce is smooth and creamy. If adding fresh spinach, stir it in and let it wilt for 1-2 minutes.
  • Step 5: Add Sausage Back In: Return the cooked sausage slices to the pot. Stir everything to combine, ensuring pasta and sausage are coated in the creamy Cajun sauce.
  • Step 6: Serve: Taste and adjust seasoning with salt and pepper as needed. Serve immediately, piping hot, garnished with fresh chopped parsley.
