Ingredients

  • 1 lb ground beef
  • 3 cups potatoes, sliced about 3 medium potatoes
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped any color
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • 1 cup shredded cheese cheddar or blend
  • 2 tbsp olive oil

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  • Stir in onion, bell pepper, and garlic. Cook for 5 minutes until softened.
  • Add potatoes, paprika, salt, black pepper, and oregano. Stir well to coat.
  • Cover and cook on medium-low heat for 20–25 minutes, stirring occasionally, until potatoes are tender.
  • Sprinkle shredded cheese over the top, cover again, and cook 2–3 minutes until melted.
  • Garnish with parsley if desired and serve hot.

Notes

Substitute ground turkey or chicken for a lighter version. Add mushrooms, zucchini, or spinach for extra vegetables. Pepper jack cheese adds a nice kick.
