These No-Bake Peanut Butter Cheesecake Bites are not only quick and easy to whip up, but they also bring those sweet memories flooding back. Perfect for a last-minute dessert or a delightful snack, these bites are sure to impress your friends and family!

Ingredients
  

For the No-Bake Peanut Butter Cheesecake Bites

  • 1 cup creamy peanut butter Choose your favorite brand for a rich flavor.
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar A touch of sweetness to round out the flavors.
  • 1 teaspoon vanilla extract For that warm, inviting aroma.
  • 1 cup graham cracker crumbs These provide a delightful crunch.
  • 1/2 cup chocolate chips optional
  • Sea salt for garnish, optional

Instructions
 

  • Step 1: In a mixing bowl, combine the creamy peanut butter and softened cream cheese. Mix until smooth and well combined.
  • Step 2: Add the powdered sugar and vanilla extract to the mixture. Continue to mix until fully incorporated.
  • Step 3: Stir in the graham cracker crumbs until evenly distributed throughout the mixture.
  • Step 4: Using a small cookie scoop or your hands, form the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
  • Step 5: If desired, melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth. Dip each peanut butter cheesecake bite into the melted chocolate, then return to the baking sheet.
  • Step 6: Sprinkle a small amount of sea salt on top of each bite for garnish, if desired.
  • Step 7: Refrigerate the bites for at least 1 hour, or until firm. Serve cold and enjoy.

Notes

These bites are best stored in an airtight container in the refrigerator. They will stay fresh for about a week, although I doubt they'll last that long! You can also freeze them for up to a month. Just make sure to separate layers with parchment paper to prevent sticking.
