  • 9 sheets graham crackers 1 sleeve; honey, cinnamon, or chocolate options
  • ¾ cup creamy peanut butter or natural, stir-free (well-mixed)
  • ¼ cup butter softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil or butter

  • Step 1: Whip up the peanut butter filling: In a medium-sized mixing bowl, combine the creamy peanut butter, softened butter, powdered sugar, and vanilla extract. Now, get in there and mix, mix, mix! You want it to be super smooth and creamy, without any lumps of butter or sugar. I find a sturdy spoon or a hand mixer works best here.
  • Step 2: Assemble your sandwiches: Take each full graham cracker sheet and break it in half along the perforated line, creating two squares. Now, grab about 1 generous tablespoon of your glorious peanut butter mixture and spread it evenly onto one graham cracker half. Don't go too thick, or it'll squish out the sides! Place another graham cracker half on top to form a perfect little sandwich. As you assemble them, place your finished sandwiches on a parchment-lined tray.
  • Step 3: Melt the chocolate: In a microwave-safe bowl, combine your chocolate chips and coconut oil (or butter). Pop it in the microwave and heat in 20-second bursts. After each burst, give it a good stir. Keep going until the chocolate is gloriously smooth and fully melted. Patience is key here – you don't want to burn the chocolate!
  • Step 4: Dip and decorate: Now for the fun part! Take each graham cracker sandwich and dip it halfway into the melted chocolate. You can also use a spoon to drizzle chocolate over the tops for a more rustic look. Once dipped or drizzled, return each treat to your parchment-lined tray. This is the moment to get fancy if you want! A little sprinkle of flaky sea salt on top right after dipping is my absolute favorite way to finish these, as it really makes the chocolate and peanut butter sing.
  • Step 5: Chill out: Once all your sandwiches are chocolate-dipped and looking fabulous, pop the tray into the refrigerator for about 30 minutes. This chilling time is super important; it allows the chocolate to firm up and the peanut butter filling to set, making them perfect for eating.

Substitutions & Additions: Want to get creative? Try almond, cashew, or sunflower seed butter. Experiment with dark or white chocolate. Add toppings like sprinkles, chopped nuts, mini chocolate chips, cocoa powder, flaky sea salt, or a pinch of cinnamon to the peanut butter. For richness, add 1 tbsp cream cheese to the peanut butter mixture.
Tips for Success: Ensure butter is properly softened for a smooth mixture. Don't overheat chocolate; melt in short bursts, stirring often, to prevent seizing. Use parchment paper for easy transfer and cleanup. Adjust peanut butter consistency with a tiny splash of milk (if too stiff) or extra powdered sugar (if too soft).
How to Store: Store in an airtight container in the refrigerator for 1-2 weeks. Freeze in a single layer, separated by parchment, for 2-3 months. Thaw in the refrigerator before serving.
