  • 1 lb smoked sausage sliced (I prefer a good quality, fully cooked sausage for convenience)
  • 1 tablespoon olive oil A neutral oil works great here.
  • 1 medium onion chopped
  • 1 bell pepper diced (any color!)
  • 2 cloves garlic minced
  • 1 cup heavy cream This creates the luscious, creamy sauce.
  • 1 cup shredded cheddar cheese A classic choice, but feel free to experiment!
  • 0.5 cup shredded mozzarella cheese Adds a nice stretch and melt.
  • 1 teaspoon smoked paprika Enhances the smoky flavor of the sausage.
  • 0.5 teaspoon garlic powder Because you can never have too much garlic!
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sausage; cook 5-7 minutes until browned. Remove and set aside.
  • Add onion, bell pepper, and garlic to the skillet; sauté 3-4 minutes until softened.
  • Pour in heavy cream; simmer 2-3 minutes until slightly thickened.
  • Reduce heat to low. Stir in cheddar and mozzarella cheese until melted and creamy.
  • Add smoked paprika, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
  • Return sausage to skillet; stir to combine. Cook 2-3 minutes to heat through.
  • Garnish with parsley (optional) and serve immediately.

Notes

Don't overcrowd the skillet. Cook the sausage in batches if necessary to ensure even browning. For a richer flavor, use homemade garlic powder if you have it on hand. This dish can be prepped ahead of time! Sauté the vegetables, then store them separately until ready to combine with the sausage and cheese. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
