Ingredients
  

  • 2 boneless, skinless chicken breasts diced into bite-sized pieces
  • 2 medium zucchinis sliced into thick rounds or half-moons
  • 1 cup cherry tomatoes
  • ½ red onion thinly sliced
  • 2 cloves garlic minced
  • olive oil generous drizzle
  • 2 tbsp dried oregano
  • ½ tsp dried basil
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Step 1: Preheat Oven & Prepare Dish: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  • Step 2: Combine Ingredients: In a large mixing bowl, toss together the diced chicken breasts, sliced zucchinis, cherry tomatoes, thinly sliced red onion, and minced garlic. Drizzle generously with olive oil. Sprinkle in the dried oregano, dried basil, smoked paprika, salt, black pepper, and red pepper flakes (if using). Mix everything thoroughly to ensure all ingredients are evenly coated.
  • Step 3: Bake: Spread the mixture evenly in the prepared baking dish. Top with shredded mozzarella and grated Parmesan cheese. Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 20 minutes.
  • Step 4: Brown the Cheese: Carefully remove the foil from the baking dish. Return the dish to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is perfectly melted, golden brown, and bubbly.
  • Step 5: Garnish and Serve: Carefully remove the bake from the oven and let it rest for a few minutes. Before serving hot, sprinkle generously with fresh chopped parsley. Serve immediately.

Notes

To lighten the dish, swap chicken for chickpeas or add bell peppers, eggplant, or spinach for extra veggies. Experiment with different cheeses like feta or goat cheese for a tangy kick. Add Kalamata olives or a squeeze of fresh lemon juice over the top just before serving for an extra layer of Mediterranean goodness. Ensure you cut chicken and zucchini into similar-sized pieces for even cooking, and avoid overcrowding the pan to prevent steaming. Pat chicken dry before dicing to help seasonings stick. You can chop all veggies and dice chicken ahead of time and store in separate airtight containers. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat individual portions in the microwave or in the oven at 350°F (175°C) for 10-15 minutes.
