Ingredients
  

  • 1 lb ground beef 80/20 recommended, but leaner works too
  • 1 cup cheddar cheese shredded; freshly shredded melts smoother
  • 1 can corn kernels drained
  • 1 cup cooked pasta penne or elbow, cooked al dente
  • 1/2 cup BBQ sauce your favorite brand
  • 1/2 cup diced onions
  • salt to taste
  • pepper to taste

Instructions
 

  • Step 1: Brown the Beef and Onions. Heat a large skillet over medium-high heat. Add ground beef and diced onions. Season generously with salt and pepper. Cook, breaking the beef apart with a spoon, until beautifully browned and onions are soft and translucent. Drain any excess fat.
  • Step 2: Combine Everything. In a spacious 9x13 inch baking dish, combine the cooked pasta, the browned beef and onion mixture, drained corn kernels, BBQ sauce, and three-quarters of the shredded cheddar cheese. Stir until thoroughly combined and coated.
  • Step 3: Bake to Perfection. Preheat oven to 375°F (190°C). Sprinkle the remaining cheddar cheese evenly over the top of the casserole. Bake for 20-25 minutes, or until bubbly and golden-brown on top, and the cheese is melted and lightly browned.
  • Step 4: Serve and Enjoy. Once out of the oven, let the casserole rest for a few minutes before serving. This helps the flavors meld and makes for easier serving. Dish out and enjoy!

Substitutions & Additions: Add a pinch of chili powder, smoked paprika, or diced jalapeños for spice. Sneak in diced bell peppers, black beans, or frozen peas for extra veggies. Swap cheddar for Monterey Jack, colby, or a Mexican blend. Stir in cream cheese for extra creaminess. Ground turkey or chicken can be used instead of beef. Garnish with fresh cilantro, sour cream, or crushed tortilla chips. Add a teaspoon of Worcestershire sauce or a splash of ketchup to the beef for more 'bun flavor'.
Tips for Success: Don't skip draining excess fat from the ground beef. Cook pasta al dente as it will continue to cook in the oven. Season the beef as it browns for maximum flavor. This casserole can be assembled up to a day in advance and refrigerated (add 10-15 minutes to baking time if baking from cold). How to Store: Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. To freeze, cool completely, then freeze individual portions or the entire casserole (if freezer-safe) tightly wrapped in plastic wrap and foil for up to 2-3 months. Thaw overnight in the refrigerator before reheating. Reheat individual portions in the microwave. For a whole casserole, cover with foil and reheat in a 350°F (175°C) oven for 20-30 minutes, removing foil for the last 5-10 minutes to crisp the top.
