Ingredients
  

  • 1 cup Greek Yogurt or plain yogurt
  • 1 tbsp Honey or Maple Syrup optional
  • 1 cup Strawberries chopped
  • 1 cup Mango diced
  • 1 Banana sliced
  • 1/2 cup Granola optional

Instructions
 

  • Step 1: If using plain yogurt, gently mix it with honey or maple syrup in a small bowl until well combined and lightly sweetened to your liking. If using pre-sweetened or flavored yogurt, skip this step.
  • Step 2: Spoon a generous layer of your prepared yogurt into the bottom of a clear glass or bowl.
  • Step 3: Carefully add a layer of diced mango on top of the yogurt.
  • Step 4: Spoon another layer of yogurt over the mango, enough to just cover the fruit.
  • Step 5: Add a layer of chopped strawberries over the second yogurt layer.
  • Step 6: Continue layering with the remaining yogurt, mango, and strawberries until your glass is full.
  • Step 7: Artfully arrange fresh banana slices on top. Add any extra fruit if desired.
  • Step 8: If using, sprinkle a generous amount of granola over the top for crunch. Serve immediately.

Notes

This parfait is incredibly versatile! Swap Greek yogurt for vanilla, coconut, almond, or soy yogurt. Experiment with other fruits like blueberries, raspberries, kiwi, peaches, or pineapple. For extra crunch, try chopped nuts, seeds (chia, flax, pumpkin), toasted coconut flakes, or mini chocolate chips. Add a pinch of cinnamon or vanilla extract to the yogurt, or a spoonful of fruit jam between layers.
Ensure all ingredients are well-chilled before assembling for a refreshing parfait. If prepping ahead, add granola right before serving to prevent sogginess. Slice bananas just before serving to avoid browning. For meal prepping, chop fruits and portion granola into separate containers, assembling right before eating for optimal freshness and texture.
Store assembled parfaits in an airtight container in the refrigerator for up to 24 hours. Fruit may soften slightly, and granola (if added) will lose its crunch.
