Equipment

  • Large skillet
  • Large bowl
  • Baking sheet

Ingredients

  • 1 pound lean ground beef
  • 1 package taco seasoning mix (1 oz)
  • 1 can diced tomatoes with green chiles (10 oz), undrained
  • 2 cups sharp cheddar cheese grated
  • 1 bottle ranch dressing (8 oz)
  • 75 frozen phyllo cups (5 packages of 15 count each)

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large skillet, brown the lean ground beef over medium heat until fully cooked. Drain any excess fat.
  • Step 3: Stir in the taco seasoning mix and the undrained diced tomatoes with green chiles. Mix well and let it simmer for about 5 minutes.
  • Step 4: In a large bowl, combine the grated sharp cheddar cheese and the ranch dressing, stirring until well mixed and creamy. Add the cooked meat mixture to the cheese and ranch blend and stir until everything is perfectly combined and coated.
  • Step 5: Spoon a generous amount of the taco ranch mixture into each phyllo cup. Do not overfill.
  • Step 6: Place the filled phyllo cups on a baking sheet. Bake for 8-10 minutes if using thawed phyllo cups, or 10-13 minutes if using them from frozen, until the filling is hot and bubbly and the phyllo edges are golden and crispy.
  • Step 7: Let them cool for 1-2 minutes before serving.

Notes

Substitutions & Additions: Use ground turkey or chicken instead of beef. Experiment with Monterey Jack, Pepper Jack, or a Mexican cheese blend. Stir in rinsed and drained black beans or corn kernels. Add finely diced fresh or pickled jalapeños or a pinch of cayenne pepper for extra spice. Offer a topping bar with sour cream, salsa, guacamole, chopped fresh cilantro, or thinly sliced green onions.
Tips for Success: Avoid overfilling phyllo cups to prevent spillage and ensure crispiness. For the crispiest phyllo cups, let them thaw slightly on the counter. The meat and ranch mixture can be prepared up to 2 days in advance and stored in the refrigerator. Serve warm for best results. If making a large batch, bake in stages to avoid overcrowding baking sheets.
Storage & Reheating: Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat on a baking sheet in a preheated oven at 300°F (150°C) for 5-8 minutes, or use an air fryer. Freezing baked bites is not recommended; prepare and freeze the filling separately, then thaw and assemble fresh.
FAQs: To make vegetarian, swap ground beef for plant-based ground meat alternatives or a mixture of seasoned black beans and corn. Phyllo cups are recommended for their unique light and crispy texture; other pastry types will vary in results. If phyllo cups brown too quickly, lightly tent the baking sheet with aluminum foil. For additional dips, consider fresh tomato salsa, creamy avocado ranch dip, or warm queso dip.
