Irresistible Chocolate Chip Cookie Dough Brownie Bombs

  • 1 box brownie mix Plus ingredients as directed on box
  • 1 cup butter softened
  • 1 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 0.25 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup mini chocolate chips
  • 2 cups chocolate chips for coating
  • 2 tablespoons vegetable oil

Instructions
 

  • Prepare brownie mix as directed on the package; bake in a 9x13 inch pan. Cool completely. I usually let mine cool on a wire rack for faster cooling.
  • Cream together butter, brown sugar, and granulated sugar until light and fluffy. Use an electric mixer for best results – it makes the process so much faster!
  • Add milk and vanilla; mix until combined.
  • Gradually add flour and salt; mix until just combined. Stir in mini chocolate chips. Don't overmix the dough!
  • Scoop cookie dough into 1-inch balls; place on a parchment-lined baking sheet. Freeze for 30 minutes. This helps them hold their shape during dipping.
  • Crumble cooled brownies. Flatten a brownie piece, enclose a cookie dough ball, and seal. Repeat. Make sure the brownie completely covers the cookie dough.
  • Melt chocolate chips and oil in a microwave-safe bowl until smooth. Microwave in 30-second intervals, stirring in between, to prevent burning.
  • Dip each brownie bomb in melted chocolate; let excess drip off. Place on a parchment-lined baking sheet. Refrigerate until chocolate sets. This takes about 30 minutes.

Notes

Don't overmix the cookie dough, or it can become tough. Make sure your brownie is completely cool before assembling the bombs. Otherwise, the chocolate will melt. Freezing the cookie dough balls makes them easier to handle and prevents them from getting too soft while you’re dipping them in chocolate. You can prepare the cookie dough and brownie crumbles ahead of time and assemble the bombs the day you plan to serve them. Store your brownie bombs in an airtight container in the refrigerator for up to 3 days. They are best enjoyed chilled!
