Ingredients
  

  • 1 cup mashed sweet potatoes cooked and cooled
  • 1 ripe banana mashed
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease your donut pan generously. I like to use a little cooking spray and then dust it lightly with flour.
  • In a large bowl, mash together the sweet potatoes, banana, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Make sure everything is well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. This helps ensure everything is evenly distributed.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overmix! Overmixing can lead to tough donuts.
  • Fill each donut pan cavity about halfway with batter. I usually use a small ice cream scoop for even distribution.
  • Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Ovens vary, so keep an eye on them!
  • Let the donuts cool in the pan for a few minutes before gently transferring them to a wire rack to cool completely.

Notes

Feel free to get creative! Swap the oil: Use melted coconut oil for a hint of tropical flavor. Add-ins: Fold in chocolate chips, chopped nuts, or dried cranberries for extra texture and flavor.
