Homemade Nutter Butter Cookies

Today, I'm thrilled to share with you my favorite recipe for homemade Nutter Butter cookies. They're quick, easy, and packed with that beloved peanut butter flavor that makes them simply unforgettable!

Ingredients
For the Cookies
- 1 cup unsalted butter softened
- 1 cup creamy peanut butter Use your favorite brand.
- 1 cup granulated sugar
- 1 cup brown sugar packed
- 2 large eggs These help bind everything together.
- 2 teaspoons vanilla extract A touch of warmth and sweetness.
- 3 cups all-purpose flour The foundation of our cookie dough.
- 1 teaspoon baking powder Helps the cookies rise a bit.
- 1 teaspoon baking soda Another leavening agent for a perfect texture.
- ½ teaspoon salt Balances the sweetness.
- 1 cup chopped peanuts optional, for added crunch and flavor.
- 1 cup chocolate chips for dipping, optional.
Instructions
- Step 1: Preheat your oven to 350°F (175°C). This step is crucial for even baking.
- Step 2: In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and well combined.
- Step 3: Beat in the eggs, one at a time, making sure to mix well after each addition. Stir in the vanilla extract to enhance the cookie flavor.
- Step 4: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. This ensures even distribution of the dry ingredients.
- Step 5: Gradually add the dry mixture to the wet ingredients, mixing until just combined. If you love a little crunch, fold in the chopped peanuts at this stage.
- Step 6: Drop rounded tablespoons of dough onto ungreased baking sheets, making sure to leave some space between each cookie.
- Step 7: Use a fork to create a crisscross pattern on the top of each cookie, adding that classic Nutter Butter look.
- Step 8: Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
- Step 9: If you want to take these cookies to the next level, melt some chocolate chips and dip half of each cooled cookie into the chocolate. Let the chocolate set before serving.
Notes
To keep your cookies fresh, store them in an airtight container at room temperature. They should last about a week, if they last that long! For longer storage, consider freezing them. Just make sure to separate layers with parchment paper to prevent sticking.
