  • 0.5 cup unsalted butter softened
  • 1 cup crushed pineapple drained
  • 3 large eggs They help bind everything together.

  • 0.5 teaspoon baking soda A little boost for leavening.

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan to ensure your cake comes out easily.
  • Step 2: In a large mixing bowl, cream together the softened butter and granulated sugar until it’s light and fluffy. This step is crucial for a tender cake!
  • Step 3: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract for that lovely aroma.
  • Step 4: In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the creamed mixture, alternating with the crushed pineapple. Mix until just combined; be careful not to overmix!
  • Step 5: Fold in the shredded coconut and chopped pecans, if using. This is where the cake gets its delightful texture.
  • Step 6: Pour the batter into the prepared baking pan and spread it evenly.

Notes
