Cocktail shaker
Tall glass
- 1 ounce coconut rum
- 1 ounce peach schnapps
- 2 ounces pineapple juice
- 1 ounce cranberry juice
- 0.5 ounce fresh lime juice
- lemon-lime soda or sparkling water splash, to top
- Ice cubes for shaking and serving
- Pineapple wedge for garnish
- Maraschino cherry for garnish
- Mint sprig for garnish
- Edible flower for garnish (optional)
Step 1: Grab your cocktail shaker and fill it about two-thirds of the way with ice cubes.
Step 2: Pour in the coconut rum, peach schnapps, pineapple juice, cranberry juice, and fresh lime juice.
Step 3: Secure the lid and shake vigorously for 15-20 seconds, or until the shaker is frosty on the outside.
Step 4: Fill a tall glass with fresh ice cubes.
Step 5: Strain the mixture from the shaker into the prepared glass over the fresh ice.
Step 6: Top it off with a splash of lemon-lime soda or sparkling water for fizz.
Step 7: Garnish with a pineapple wedge, maraschino cherry, mint sprig, or edible flower.
Step 8: Serve immediately and enjoy!
Substitutions: White rum can substitute coconut rum, but the coconut flavor will be lost. Raspberry or orange liqueur can swap peach schnapps. Add a splash of orange or passion fruit juice for more tropical flavor.
Non-Alcoholic: Skip the rum and schnapps, double the pineapple and cranberry juices (approx. 3 oz pineapple, 2 oz cranberry), add extra lime and soda/sparkling water. Add a splash of coconut syrup for flavor.
Tips: Use fresh lime juice for best flavor. Ensure juices are cold before mixing. Shake well for proper chilling and dilution. Always use fresh ice in the serving glass. Don't skip the garnish!
Storage: Mixed cocktails are best enjoyed fresh. Store individual ingredients (juices, rum, schnapps) as usual. Fresh lime juice can be stored in the fridge for a day or two. Prep garnishes and store separately in the fridge.
Big Batch: Pre-mix all liquid ingredients except the soda/sparkling water in a pitcher and refrigerate. Pour into glasses with fresh ice and top with soda just before serving.
