Instructions
Step 1: Combine rhubarb, strawberries, maple syrup, and lemon juice in a medium saucepan. Cook over medium heat, stirring occasionally, for 10–12 minutes, or until fruit softens and breaks down.
Step 2: Gently mash the fruit mixture to your desired consistency. Add more maple syrup or honey to taste at this point.
Step 3: Remove from heat. Stir in chia seeds and vanilla extract (if using). Let sit for 10–15 minutes to thicken.
Step 4: Cool completely, then transfer to an airtight container. Refrigerate for up to 2 weeks.
