Ingredients
  

  • 2 cups chopped rhubarb fresh or frozen
  • 2 cups chopped strawberries fresh or frozen
  • 1/3 cup maple syrup or honey adjust to your sweetness preference
  • 2 tablespoons lemon juice this brightens the flavor and helps with setting
  • 1 teaspoon vanilla extract optional
  • 3 tablespoons chia seeds the magic ingredient that thickens our jam!

Instructions
 

  • Step 1: Combine rhubarb, strawberries, maple syrup, and lemon juice in a medium saucepan. Cook over medium heat, stirring occasionally, for 10–12 minutes, or until fruit softens and breaks down.
  • Step 2: Gently mash the fruit mixture to your desired consistency. Add more maple syrup or honey to taste at this point.
  • Step 3: Remove from heat. Stir in chia seeds and vanilla extract (if using). Let sit for 10–15 minutes to thicken.
  • Step 4: Cool completely, then transfer to an airtight container. Refrigerate for up to 2 weeks.

Notes

Feel free to experiment! You can substitute other berries. A pinch of cinnamon or ginger would also be delicious additions.
