Grandma's Famous Cobb Salad

This Cobb salad recipe is a vibrant, satisfying classic that's surprisingly easy to make – perfect for a weeknight dinner or a crowd-pleasing potluck.

Salad Ingredients

  • 6 cups chopped romaine lettuce or your favorite mixed greens the crispier, the better!
  • 2 cups chopped or shredded cooked chicken breast rotisserie chicken is a fantastic shortcut!
  • 4 hard-boiled eggs peeled and quartered
  • 1 large avocado diced
  • 1 cup halved cherry tomatoes
  • 0.5 cup crumbled blue cheese (or feta) blue cheese adds a sharp bite, but feta is a delicious milder alternative.
  • 4 slices chopped cooked bacon (or turkey bacon) for that extra smoky crunch. Turkey bacon is a healthier swap!
  • 0.5 cup thinly sliced red onion adds a nice little zing
  • croutons optional, for added texture and crunch

Homemade Vinaigrette Dressing

  • 0.33 cup olive oil use a good quality extra virgin olive oil for the best flavor.
  • 3 tablespoons red wine vinegar adds a lovely tang.
  • 1 teaspoon Dijon mustard for a little extra zip.
  • 1 minced garlic clove just a touch of garlic goes a long way.
  • salt and pepper to taste

Instructions
 

  • Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.
  • Prep the ingredients: Cook and chop your chicken (or shred rotisserie chicken). Hard-boil, peel, and quarter the eggs. Dice the avocado. Halve the cherry tomatoes and thinly slice the red onion. Cook and crumble the bacon.
  • Assemble the salad: Layer the greens in a large bowl. Arrange the chicken, eggs, avocado, tomatoes, cheese, bacon, and red onion on top. You can also toss everything together, if preferred.
  • Dress and serve: Drizzle the vinaigrette over the salad just before serving, or serve it on the side for individual preference. Gently toss the salad, or leave it layered.

Notes

Feel free to get creative! Protein swap: Grilled shrimp, chickpeas, or even tofu work well. Cheese swap: Goat cheese, Parmesan, or even a sprinkle of shredded cheddar are great alternatives. Add-ins: Try adding some chopped bell peppers, black olives, or sunflower seeds for extra flavor and texture. Make it heartier: Add some cooked pasta or quinoa for a more substantial salad.
