  • 4 cloves garlic minced
  • fresh parsley chopped, for garnish

  • Step 1: In the largest skillet over medium heat, add 1 tbsp butter and 1 tbsp olive oil. Once melted, toss in halved or quartered baby potatoes. Season with salt, pepper, dried rosemary, and dried thyme. Cook for 10-12 minutes, stirring occasionally, until fork-tender and golden brown. Remove potatoes from skillet and set aside.
  • Step 2: In the same skillet, add the remaining 1 tbsp butter. Once melted, add sirloin steak bites in a single layer, avoiding overcrowding (cook in batches if necessary). Season with a pinch of salt and pepper. Cook for 2-3 minutes per side until a nice brown crust forms and desired doneness is reached. Remove steak bites from skillet and join them with the potatoes.
  • Step 3: Reduce the heat to low. Add the last 1 tbsp butter and minced garlic to the skillet. Stir constantly for about 1 minute until the garlic is fragrant and slightly golden, being careful not to burn it.
  • Step 4: Return the cooked steak bites and potatoes to the skillet with the fragrant garlic butter. Gently toss everything together, ensuring every piece is coated in the delicious sauce. Garnish with a sprinkle of freshly chopped parsley. Serve warm immediately.
