Ingredients
  

  • 4 large flour tortillas or spinach wraps Choose your favorite
  • 1 cup cottage cheese small curd preferred
  • 1 medium cucumber thinly sliced or julienned
  • 1/4 cup finely chopped red bell pepper optional
  • 1/4 cup fresh dill or parsley chopped
  • 1 tbsp lemon juice or white wine vinegar
  • 1/2 tsp garlic powder or 1 small minced garlic clove optional
  • salt to taste
  • black pepper freshly ground, to taste
  • baby spinach optional
  • shredded carrots optional
  • sliced avocado optional

Instructions
 

  • Step 1: Prepare the Filling: Grab a medium bowl. Gently spoon in your cottage cheese. Add the lemon juice (or white wine vinegar), garlic powder (or fresh minced garlic if using), chopped fresh dill or parsley, salt, and freshly ground black pepper. Stir until everything is beautifully combined and flavors are melded.
  • Step 2: Assemble the Wraps: Lay out each tortilla on a clean, flat surface. Take about a quarter of your creamy cottage cheese mixture and spread it evenly down the center of each tortilla, leaving room around the edges for rolling.
  • Step 3: Add Vegetables: Neatly arrange your thinly sliced cucumber over the cottage cheese. If using the red bell pepper, add that too. Feel free to customize by adding any other desired optional vegetables like baby spinach, shredded carrots, or sliced avocado.
  • Step 4: Roll the Wraps: First, fold in the short sides of the tortilla over your filling. Then, starting from one of the long sides, tightly roll the tortilla all the way to the other side to ensure it holds its shape.
  • Step 5: Serve: Serve these beauties as they are, or for a prettier presentation and easier eating, slice each wrap diagonally in half before serving. Enjoy immediately, or wrap individually for a grab-and-go meal later.

Notes

Customize your wraps with extra protein like shredded chicken, tuna, or egg, or add more vegetables such as baby spinach, carrots, or radishes. For best results, chill the filling and roll wraps tightly. Store individually wrapped in the refrigerator for 1-2 days; assemble fresh for meal prep.
