Equipment

  • Large skillet
  • Spatula
  • Toaster

Ingredients

  • 1 pound ground beef 85% lean
  • 1 large onion thinly sliced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1 tsp dried thyme
  • salt and black pepper to taste
  • 4 hamburger buns
  • 1 cup shredded Swiss cheese
  • fresh parsley chopped, for garnish (optional)

Instructions

  • Heat a large skillet over medium heat. Add olive oil. Once shimmering, add thinly sliced onion and cook for 10-12 minutes, stirring often, until soft, golden, and deeply caramelized. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
  • Add ground beef to the skillet with the onions and garlic. Use a spatula to break up the beef as it cooks until fully browned and no longer pink. Carefully drain any excess fat from the skillet.
  • Stir in Worcestershire sauce, soy sauce, dried thyme, and a good pinch of salt and pepper. Stir everything to combine. Let the mixture simmer for about 5 minutes to allow the flavors to meld together.
  • While the beef mixture simmers, lightly toast the hamburger buns in a toaster, under the broiler, or in a skillet. Scoop a generous amount of the warm beef mixture onto the bottom half of each bun. Generously top with shredded Swiss cheese. Place the top bun on each sandwich.
  • Garnish with fresh chopped parsley if desired. Serve immediately.

Notes

Substitutions & Additions: For cheese, Provolone, Gruyere, or mozzarella are great alternatives to Swiss. For extra earthiness, sauté sliced mushrooms with your onions. If you prefer a saucier sloppy joe, add about 1/4 cup of beef broth during the simmering step. Try serving on crusty French bread, brioche buns, or as sliders. The sloppy joe mixture is also fantastic over pasta, rice, or baked into a casserole.
Tips for Success: Do not rush caramelizing the onions; this step is crucial for the deep, sweet, savory flavor. Drain excess fat from the ground beef to prevent greasiness and diluted flavors. Season as you go, tasting and adjusting salt or pepper as needed. A pinch of garlic powder or onion powder can deepen flavors further. If making a large batch for a crowd, keep the mixture warm in a slow cooker on the "warm" setting.
Storage & Reheating: Store leftover beef mixture in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze the cooked beef mixture in a freezer-safe bag or container for up to 3 months. Thaw overnight in the refrigerator before reheating. Reheat on the stovetop over medium-low heat, stirring occasionally, until warmed through. You may need to add a splash of water or beef broth if it seems dry.
