Ingredients
  

  • 2 cups milk chocolate or dark chocolate chips
  • 1 tbsp coconut oil, canola oil, or vegetable oil optional
  • 2 cups miniature marshmallows
  • 4-8 graham crackers broken into squares and bits
  • graham cracker crumbs, sea salt, or sprinkles for toppings

Instructions
 

  • First things first, get your workspace ready. Line a baking sheet with parchment paper. This is your non-stick insurance policy – trust me, melted chocolate loves to stick!
  • If you're planning to make some clusters on top of graham cracker squares (like little s'mores bites), break those crackers into neat squares now and lay them out on your prepared baking sheet. Break the remaining crackers into smaller, bite-sized pieces and crumbs for mixing in.
  • Now, let's melt that glorious chocolate! Put your chocolate chips (and the optional oil, if you're using it) in a microwave-safe bowl. Pop it in the microwave and heat it in 30-second bursts, stirring really well after each interval. Chocolate holds its shape even when it's melting, so that stirring is key to prevent burning! Keep going until it's silky smooth with no lumps. It usually takes 1.5 to 2 minutes total, depending on your microwave. (Alternatively, melt in a double boiler on the stove).
  • Once your chocolate is beautifully melted, it's time for the stars of the show! Gently fold the miniature marshmallows and the broken graham cracker bits you set aside into the melted chocolate. Stir just until everything is coated. Don't overmix, or your marshmallows might get a little... deflated looking.
  • Now for the fun part – forming the clusters! Using a spoon or a small cookie scoop, drop spoonfuls of the mixture onto the parchment paper. You can either plop them directly onto the graham cracker squares you laid out earlier, or just make free-form clusters on the paper. Make them as big or as small as you like!
  • Quickly, before the chocolate sets, sprinkle your chosen toppings over the clusters. Go wild with graham crumbs, add a pinch of sea salt for that sweet and salty vibe, or shower them in fun sprinkles!
  • Almost there! Pop the baking sheet into the refrigerator for at least 1 hour, or until the clusters are completely firm. This sets the chocolate and makes them easy to handle.

Notes

Melt chocolate gently in short bursts, stirring frequently, to avoid burning or seizing. Work relatively quickly once marshmallows and graham crackers are added, as the mixture will start to cool. Parchment paper is essential for easy cleanup. These clusters can be made ahead and stored in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks (recommended in warm climates).
