Equipment

  • Large skillet
  • Spatula
  • Cutting board
  • Sharp Knife or Pizza Cutter

Ingredients

  • 1 lb ground beef 80/20 recommended
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • Salt and freshly ground black pepper to taste
  • 1 cup cooked, crumbled bacon nice and crispy
  • 1.5 cups shredded cheese cheddar or American
  • 2 tbsp maple syrup use 2-3 tbsp, add more if desired
  • 4 large flour tortillas burrito size
  • Butter or cooking spray for cooking quesadillas
  • Optional toppings sliced pickles, mustard, caramelized onions

Instructions

  • Step 1: Brown the Beef: Grab a large skillet and heat it over medium-high heat. Add your ground beef and cook it until it's nice and browned all the way through. Break it up with a spoon as it cooks. Once it's done, tilt the pan and drain off any excess grease.
  • Step 2: Season the Beef: Now, sprinkle in the garlic powder, onion powder, salt, and pepper. Give it a good stir and let it cook for just about a minute. Stir it frequently so the spices don't burn.
  • Step 3: Add the Good Stuff: Stir in your cooked, crumbled bacon and the maple syrup. Mix it gently until the beef is coated evenly. Your filling is ready!
  • Step 4: Assemble the Quesadillas: Lay your flour tortillas out flat. On one half of each tortilla, layer half the cheese, then spoon on half of your beef and bacon mixture. Top it off with the remaining cheese. Add any optional toppings if using.
  • Step 5: Get Ready to Cook: Heat up another large skillet or a griddle over medium heat. Lightly butter the skillet or give it a spray with cooking spray.
  • Step 6: Cook 'Em Up: Carefully fold the empty half of each tortilla over the filling. Place the assembled quesadillas into your heated skillet. Cook for about 2-3 minutes on the first side, until it's golden brown and crispy. Then, carefully flip them over using a spatula and cook for another 2-3 minutes on the other side, until golden and crispy, and the cheese is melted inside.
  • Step 7: Serve: Remove from the skillet. Let them cool just for a minute or two. Cut them into wedges using a sharp knife or a pizza cutter. Serve immediately.

Notes

Substitutions: Try Monterey Jack, a Mexican blend, or provolone cheese. Use ground turkey or a plant-based crumble instead of beef. Add a pinch of cayenne pepper or red pepper flakes for spice. Cook finely diced bell peppers or onions with the ground beef. Add a drizzle of burger sauce or ketchup inside.
Tips: Don't skip draining the grease from the beef. Ensure bacon is crispy. Use medium heat when cooking quesadillas to prevent burning. Don't overfill. You can cook the beef and bacon ahead of time and store in the fridge; reheat beef mixture before assembling.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet over medium heat or a toaster oven for best crispiness.
FAQs: Prep the beef and bacon filling ahead. Large flour tortillas work best. The maple syrup adds a subtle sweetness, not overly sweet. You can likely bake them at 400°F (200°C) for 10-15 minutes, flipping halfway.
