Ingredients
  

  • 3 medium zucchinis sliced about 1/2 inch thick
  • 2 tbsp olive oil
  • 1/2 tsp Italian herbs
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions
 

  • Step 1: Grab your sliced zucchini and pop them into a medium-sized mixing bowl. Make sure the bowl is big enough to toss everything around easily.
  • Step 2: Drizzle the olive oil over the zucchini slices. Add your Italian seasoning, that lovely grated Parmesan cheese, kosher salt, and black pepper right on top.
  • Step 3: Give everything a really good toss. You want every single piece of zucchini to be coated evenly with that flavorful oil and seasoning mixture.
  • Step 4: Arrange the seasoned zucchini slices in a single layer in your air fryer basket. You might need to do this in batches depending on the size of your air fryer. Do not overcrowd.
  • Step 5: Set your air fryer to cook at 375 degrees Fahrenheit (190°C).
  • Step 6: Air fry for 5 minutes to start.
  • Step 7: After 5 minutes, carefully pull out the air fryer basket and give it a good shake to toss the zucchini around. This helps them cook and brown evenly on all sides.
  • Step 8: Pop the basket back in and continue air frying for an additional 3-5 minutes, checking around the 3-minute mark. You're looking for them to be tender when pierced with a fork and nicely golden brown on the edges.

Notes

Don't overccrowd the air fryer basket; cook in batches if necessary for crispy results. Slice zucchini evenly for uniform cooking. If zucchini is wet, pat slices dry before seasoning. Check often during the last few minutes to prevent burning. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. To reheat, pop them back in the air fryer at 350°F (175°C) for a few minutes.
