  • 1 box lemon cake mix
  • 1 cup 7UP soda
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 package (3.4 oz) lemon instant pudding mix
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon milk

Instructions
 

  • Step 1: Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • Step 2: In a large mixing bowl, combine the lemon cake mix, 7UP, vegetable oil, eggs, and lemon instant pudding mix. Mix until well blended.
  • Step 3: Pour the batter into the prepared baking pan and spread evenly.
  • Step 4: Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Step 5: While the cake is baking, prepare the glaze by mixing powdered sugar, lemon juice, and milk in a small bowl until smooth.
  • Step 6: Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.
  • Step 7: Drizzle the glaze over the cooled cake before serving.

Notes

For a richer flavor, you can add lemon zest to the batter. Store leftovers in an airtight container at room temperature for up to 3 days.
