Equipment

  • High-Speed Blender
  • Food processor
  • Spatula
  • Piping Bag and Star Tip (Optional)

Ingredients

  • 2 cups frozen strawberries
  • 0.5 frozen banana
  • 0.5 cup pineapple juice or water
  • 0.25 cup coconut milk or dairy milk
  • 1 tbsp honey or maple syrup optional
  • 0.5 lemon juice of

Instructions

  • Step 1: Load Ingredients: Carefully add all ingredients into a high-speed blender or food processor: frozen strawberries, frozen banana pieces, pineapple juice (or water), coconut milk (or dairy milk), sweetener (if using), and the squeeze of lemon juice.
  • Step 2: Blend: Secure the lid and start blending on a low speed, then quickly increase to high speed. Blend until the mixture is completely creamy and smooth, with no icy chunks. Stop and scrape down the sides with a spatula as needed. If it struggles to blend, add a tiny splash more juice or milk (about a tablespoon at a time) until it loosens up and becomes smooth. This may take a minute or two.
  • Step 3: Serve or Chill: Once it reaches a soft-serve consistency, serve immediately. For a firmer texture and classic swirled look, scoop the mixture into a piping bag fitted with a star tip and freeze for about 20-30 minutes before serving.

Notes

Ensure fruit is frozen solid; partially frozen fruit will result in a smoothie. Use a tamper if your blender has one to help push ingredients towards the blades. Add liquid sparingly; too much will make it too thin. Scrape down the sides frequently during blending. Best enjoyed immediately. Leftovers can be stored in an airtight container in the freezer for up to a week, but will harden; let sit out for 10-15 minutes to soften before scooping. Do not use fresh fruit. A food processor is often a better option than a regular blender if you don't have a high-speed one. This recipe is naturally vegan if using plant-based milk, maple syrup, and pineapple juice/water.
