Ingredients
  

For the Beef

  • 1 lb ground beef or beef strips
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1/4 cup honey
  • 1/3 cup BBQ sauce use your favorite brand
  • 1 tsp smoked paprika
  • salt and pepper to taste

For the Taco Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp honey
  • 1 tbsp BBQ sauce
  • 1/2 tsp smoked paprika

For Assembly

  • 6 soft taco tortillas flour or corn
  • 1 cup shredded cheddar cheese
  • Chopped fresh cilantro optional

Instructions
 

  • Step 1: In a large skillet, melt unsalted butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, watching carefully not to burn it.
  • Step 2: Add ground beef or beef strips to the skillet. If using ground beef, break it apart with a spatula as it cooks. Cook until nicely browned and fully cooked through. Carefully drain off any excess fat.
  • Step 3: Reduce the heat slightly. Stir in the honey, BBQ sauce, smoked paprika, salt, and pepper into the cooked beef. Mix well to coat the beef in the sauce. Let the mixture simmer gently for 2-3 minutes to allow flavors to meld and the sauce to thicken slightly.
  • Step 4: While the beef simmers, make the taco sauce. In a small bowl, whisk together mayonnaise, honey, BBQ sauce, and smoked paprika until smooth and creamy. Taste and adjust seasoning if needed.
  • Step 5: Warm the tortillas in a dry skillet for a few seconds per side or in the microwave until pliable. Spoon the beef mixture onto the center of each warm tortilla. Drizzle generously with the prepared taco sauce, then top with shredded cheddar cheese and optional chopped fresh cilantro. Fold and serve immediately.

Notes

You can substitute ground turkey, shredded chicken, or pulled pork for the beef. For a vegetarian option, use cooked black beans, lentils, or roasted sweet potatoes. Add sautéed diced onion, bell peppers, or corn in step 1 for extra veggies. Try different cheeses like Monterey Jack or a Mexican blend. Add extra toppings like sour cream, jalapeños, pickled red onions, or a squeeze of lime juice. For more heat, add a pinch of cayenne pepper or red pepper flakes to the beef mixture. Ensure garlic doesn't burn. Drain fat from the beef. Warm tortillas for best texture and ease of assembly. Let the beef simmer briefly to deepen flavors. Taste the taco sauce and adjust seasonings. Cooked beef and taco sauce can be prepped a day or two ahead and stored separately in the fridge. Reheat beef gently before assembling.
