Ingredients
  

For the Creamy Baja Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 clove garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • salt to taste
  • 1–2 tsp hot sauce optional
  • 1 tbsp finely chopped cilantro optional

Instructions
 

  • Step 1: Start with the Creamy Base. Grab a medium mixing bowl. Add your 1/2 cup of mayonnaise and 1/4 cup of sour cream or Greek yogurt. Use a whisk and blend them together until they are smooth and there are no lumps. You want it nice and uniform.
  • Step 2: Add the Flavor Boosters. Now, toss in your 1 tablespoon of fresh lime juice, the 1 teaspoon of lime zest, the minced garlic clove, 1 teaspoon of smoked paprika, 1/2 teaspoon of ground cumin, and 1/4 teaspoon of chili powder. Sprinkle in a pinch of salt to start. Give everything a good stir until all the spices and flavors are evenly distributed throughout the creamy base. Give it a little taste here – does it need more salt? Adjust as you like!
  • Step 3: The Optional Extras. If you like a little heat and freshness, now is the time to stir in your 1–2 teaspoons of hot sauce and the 1 tablespoon of finely chopped cilantro. Stir until they are fully incorporated.
  • Step 4: Let the Flavors Mingle. Cover your bowl and pop it in the refrigerator for at least 15–20 minutes. This chilling time allows all those wonderful flavors to really get to know each other and meld into something truly special. If you can wait longer, an hour or even overnight is even better!

Notes

Substitutions & Additions: Make it vegan using vegan mayo and plant-based yogurt/sour cream. Add more spice with chipotle hot sauce, cayenne, or adobo sauce. Swap cilantro for parsley or dill. A pinch of sugar or honey can balance acidity. Add more garlic if desired, but mince finely.
Tips for Success: Use fresh lime juice for the best flavor. Don't skip the chill time for flavors to meld. Taste and adjust seasoning to your preference. Mince garlic finely or use a press.
Storage: Store in an airtight container in the refrigerator for about 5-7 days. Stir before using.
