Ingredients
  

  • 1 cup cottage cheese full-fat preferred for richer texture, but any kind will work beautifully
  • 1 cup almond flour or coconut flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt to taste
  • fresh parsley chopped, for garnish
  • olive oil for drizzling

Instructions
 

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: Prep your baking sheet by lining it with parchment paper for easy release and cleanup.
  • Step 3: In a large mixing bowl, combine your cottage cheese, eggs, almond flour (or coconut flour), baking powder, garlic powder, onion powder, and a good pinch of salt. Mix all ingredients together using a spatula or spoon until a uniform, spreadable batter is formed.
  • Step 4: Divide the batter into 2 to 4 portions. If you want larger, thinner flatbreads, go for 2 portions. For smaller, thicker ones, aim for 4 portions.
  • Step 5: Place each portion onto the parchment-lined baking sheet. Gently flatten each by hand to approximately 1/2 inch thick, ensuring they are as even as possible for consistent baking.
  • Step 6: Drizzle generously with olive oil over each flatbread to help them crisp up and achieve a beautiful golden hue.
  • Step 7: Pop your baking sheet into the preheated oven. Bake for about 15-20 minutes, or until the edges are gloriously golden brown and the tops look slightly crispy. Keep an eye on them, as oven temperatures can vary.
  • Step 8: Once baked to perfection, remove them from the oven and let them cool on the baking sheet for a few minutes. This helps them firm up and makes them easier to handle.
  • Step 9: Before serving, sprinkle generously with freshly chopped parsley. Your easy cottage cheese flatbread is now ready to be devoured!

Substitutions & Additions: While almond and coconut flour are excellent low-carb options, you can experiment with gluten-free all-purpose flour blends if you're not strictly counting carbs, but be aware the texture might change slightly. Feel free to add a pinch of smoked paprika, Italian seasoning, dried oregano, or a tiny dash of cayenne pepper for a little kick. For extra cheesy goodness, mix in a couple of tablespoons of shredded Parmesan, mozzarella, or cheddar cheese directly into the batter. Instead of or in addition to parsley, try chopped chives, dill, or basil mixed into the batter or sprinkled on top. Finely grated zucchini (squeeze out excess water!), carrots, or spinach can be folded into the batter for added nutrients and flavor. Yes, you can even make it sweet! Omit the garlic and onion powder, add a touch of sweetener (like stevia or maple syrup), a pinch of cinnamon, and perhaps some vanilla extract. Top with fresh berries or a dollop of Greek yogurt for a healthy breakfast treat.
Tips for Success: Don't overmix; mix until just combined. Overmixing can develop gluten in wheat flours (if using a blend) and can make the flatbread tough. Try your best to flatten the portions evenly; this ensures they cook at the same rate, giving you consistent crispiness and doneness across all your flatbreads. Parchment paper is essential to prevent sticking and makes cleanup a breeze. Ovens vary, so adjust baking time as needed. Start checking your flatbreads at 15 minutes, and if they need a little more crisp, give them another 2-5 minutes. You want those golden edges! This flatbread is fantastic on its own, but it's also incredible as a base for mini pizzas, a dipper for hummus or guacamole, or alongside a hearty soup.
Storage: Store leftover flatbreads in an airtight container in the refrigerator for up to 3-4 days. To reheat, pop them back in the oven at 350°F (175°C) for a few minutes until warmed through and crispy again, or use a toaster oven (a microwave works, but they won't be as crispy). You can freeze the baked flatbreads! Once completely cooled, wrap them individually in plastic wrap, then place them in a freezer-safe bag or container. They'll keep for up to 1-2 months. Thaw in the refrigerator overnight and reheat as directed above.
