  • 8 ounces egg noodles or rice noodles I prefer egg noodles for their hearty texture.
  • 1 pound boneless, skinless chicken breasts, sliced Thinly slicing the chicken helps it cook faster.
  • 2 tablespoons vegetable oil For stir-frying.
  • 1 cup bell peppers, sliced Use your favorite colors for a vibrant dish!
  • 1 cup broccoli florets Adds a healthy dose of greens.
  • 1 carrot, julienned Adds sweetness and crunch.
  • 3 green onions, sliced For a fresh, finishing touch.
  • 0.25 cup sesame seeds For added nutty flavor and a beautiful garnish. (optional)
  • 0.5 cup soy sauce (or tamari for gluten-free) Tamari offers a richer, gluten-free alternative.
  • 0.25 cup honey or maple syrup Maple syrup adds a lovely depth of flavor.
  • 2 tablespoons rice vinegar Adds a touch of acidity to balance the sweetness.
  • 2 teaspoons cornstarch mixed with 2 tablespoons water - This creates a lovely glossy sauce.
  • 2 tablespoons water
  • 1 teaspoon garlic, minced Fresh garlic is always best!
  • 1 teaspoon ginger, minced A little ginger adds warmth and complexity.

Instructions
 

  • Cook noodles according to package directions. Drain and set aside. Don't overcook them – you want them to still have a bit of bite.
  • Whisk together teriyaki sauce ingredients in a small bowl. Set aside. This step makes the cooking process a breeze later on.
  • Heat oil in a large skillet or wok over medium-high heat. Cook chicken for 5-7 minutes until cooked through and golden brown. I like to brown the chicken nicely for extra flavor.
  • Add bell peppers, broccoli, and carrots; stir-fry for 3-4 minutes until tender-crisp. Don't overcook the vegetables – you want them to retain their crunch.
  • Add noodles to the skillet and pour teriyaki sauce over all. Toss to combine and cook for 2-3 minutes until heated through. Make sure everything is coated in that delicious sauce.
  • Garnish with green onions and sesame seeds (optional) and serve immediately. Enjoy the delicious result of your efforts!

Notes

Feel free to get creative! Substitute shrimp or tofu for the chicken. Add other veggies like snap peas, mushrooms, or zucchini. For a spicier kick, add a pinch of red pepper flakes to the sauce. You could also add some toasted peanuts for extra crunch! Don't overcrowd the skillet when cooking the chicken and vegetables. Cook in batches if necessary to ensure even cooking. For a richer sauce, add a tablespoon of sesame oil to the teriyaki sauce. Prep the vegetables ahead of time to save time on busy weeknights. Store them in airtight containers in the refrigerator. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.
