Ingredients
  

  • 2 large croissants halved
  • 1 cup cooked chicken breast shredded, leftover rotisserie chicken works well
  • 1/2 cup Caesar dressing
  • 1/4 cup freshly grated Parmesan cheese
  • 1 cup Romaine lettuce chopped
  • 8 cherry tomatoes halved
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter

Instructions
 

  • Step 1: In a medium bowl, toss shredded cooked chicken with Caesar dressing until nicely coated.
  • Step 2: Heat a skillet over medium heat and add the olive oil. Add the dressed chicken mixture and cook for 3-5 minutes, stirring occasionally, until heated through. Remove from heat.
  • Step 3: Slice the croissants horizontally through the middle.
  • Step 4: Spread unsalted butter on the inner side of each croissant half.
  • Step 5: Place the buttery side of the croissant halves down onto the same skillet (you can wipe it first if desired). Toast for about 2 minutes, or until golden brown. Remove from skillet.
  • Step 6: Place the bottom half of each toasted croissant on your plate.
  • Step 7: Pile a generous layer of chopped Romaine lettuce onto the bottom halves.
  • Step 8: Spoon the warm chicken Caesar mixture over the lettuce.
  • Step 9: Sprinkle freshly grated Parmesan cheese over the chicken.
  • Step 10: Tuck the cherry tomato halves around the chicken mixture.
  • Step 11: Finish with a pinch of salt and a grind of pepper.
  • Step 12: Place the top half of the croissant over the filling and gently press down.
  • Step 13: Serve immediately and enjoy!

Notes

Substitutions & Additions: You can substitute cooked turkey or canned chicken. Try other dressings like creamy ranch. Swap Romaine for spinach or arugula. Use provolone, mozzarella, or white cheddar instead of Parmesan. Add cooked bacon bits, sliced red onion, avocado, cucumber, or roasted red peppers.
Tips for Success: Avoid overcooking the chicken as it's already cooked, just warming it. Watch croissants closely while toasting to prevent burning. Ensure lettuce and tomatoes are cold for contrast with warm chicken. The chicken mixture can be made ahead (up to 3-4 days in fridge); store other components separately and assemble just before serving to prevent sogginess.
