Ingredients
  

  • 1 pound lean ground beef
  • 1 ounce taco seasoning mix packet
  • 1/2 cup water
  • 8 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1 ounce ranch seasoning mix packet
  • 1 cup shredded cheddar cheese
  • 1 package refrigerated crescent roll dough 8 ounces
  • Chopped fresh cilantro optional garnish
  • diced tomatoes optional garnish
  • jalapeños optional garnish

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a large skillet, brown the ground beef over medium-high heat, breaking it up into crumbles. Drain off any excess grease.
  • Step 3: Stir in the taco seasoning mix and the 1/2 cup of water. Bring the mixture to a simmer, then reduce heat to low and let it cook for about 5-7 minutes, stirring occasionally, until the liquid is mostly absorbed.
  • Step 4: While the beef cooks, grab a medium bowl. Add the softened cream cheese, sour cream, and ranch seasoning mix. Stir until completely smooth and creamy.
  • Step 5: Unroll the crescent roll dough onto a lightly floured surface and separate into 8 individual triangles along the perforations.
  • Step 6: Place a small spoonful of the cream cheese mixture onto the wide end of each dough triangle.
  • Step 7: Top the cream cheese mixture with a small spoonful of the seasoned taco meat.
  • Step 8: Sprinkle shredded cheddar cheese over the taco meat on each triangle.
  • Step 9: Starting from the wide end, gently roll each triangle up towards the pointed end.
  • Step 10: Arrange the rolled crescents on an ungreased baking sheet, leaving some space between them.
  • Step 11: Bake for 12-15 minutes, or until golden brown and cooked through.
  • Step 12: Let the bites cool on the baking sheet for a few minutes before serving warm. Garnish with fresh cilantro, diced tomatoes, or jalapeños if desired.

Notes

Substitutions & Additions: Use ground turkey, shredded chicken, or seasoned black beans (vegetarian) instead of beef. Swap cheddar for Monterey Jack, Colby Jack, or Pepper Jack. Add a pinch of cayenne or diced jalapeños/green chiles for heat. Stir in cooked diced onion, corn, or black beans into the taco meat. Serve with sour cream, salsa, guacamole, or extra ranch dip.
Tips for Success: Ensure cream cheese is softened. Do not overfill to prevent leakage. Drain grease from beef. Watch the oven closely during the last few minutes of baking.
Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a 350°F oven for a few minutes until warm and melty.
