Easy Cheesy Garlic Parmesan Burger Bombs

These Cheesy Garlic Parmesan Burger Bombs are about to become that memory for you! They're warm, cheesy, garlicky little pockets of deliciousness, like a burger had a cozy hug with a biscuit, and honestly, they couldn't be easier to make. Perfect for a quick weeknight bite, game day, or just because you deserve something ridiculously tasty!

Ingredients
  

  • 1 can refrigerated biscuit dough standard size, about 8 biscuits
  • 1 lb ground beef 80/20 or 85/15 suggested
  • 1 small onion finely chopped
  • 1 tsp garlic powder for the meat filling
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp ketchup optional
  • 1 cup shredded cheddar cheese
  • 3 tbsp butter melted, for garlic butter
  • 2 cloves garlic minced (or ½ tsp powder), for garlic butter
  • 1/4 cup grated parmesan cheese
  • Chopped parsley for garnish, optional

Instructions
 

  • Step 1: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Step 2: In a large skillet, brown ground beef and finely chopped onion over medium heat, breaking up meat. Drain excess grease.
  • Step 3: Remove skillet from heat. Season beef mixture with salt, pepper, and 1 tsp garlic powder. Stir in ketchup (if using) and shredded cheddar cheese until melted. Let cool slightly.
  • Step 4: Separate biscuit rounds. Gently flatten each into a 3-inch circle using fingers or palm.
  • Step 5: Spoon 1-2 tbsp of filling onto the center of each flattened biscuit circle. Gather edges and pinch seams firmly together to completely seal.
  • Step 6: Place bombs seam-side down on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, until golden brown and puffed up.
  • Step 7: While bombs bake, melt 3 tbsp butter in a small bowl. Stir in the minced garlic (or ½ tsp garlic powder).
  • Step 8: As soon as the bombs come out of the oven, immediately brush them generously with the garlic butter. Sprinkle with ¼ cup grated Parmesan cheese and chopped parsley (if using). Serve them warm.

Notes

If you happen to have any leftovers (a big "if"!), here's how to keep them fresh: Let the burger bombs cool completely before storing. Store cooled bombs in an airtight container in the refrigerator for up to 3-4 days. The best way to reheat is in a toaster oven or conventional oven at around 350°F (175°C) for 5-10 minutes, or until heated through and the biscuit is crispy again. Microwaving works in a pinch but can make the biscuit a bit soft. You can freeze baked and cooled bombs in a single layer on a baking sheet until firm, then transfer them to a freezer-safe bag or container for up to 2-3 months. Thaw overnight in the fridge and reheat as directed above.
