  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into bite-sized pieces
  • 2 tbsp olive oil plus more for the griddle
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 4 cloves garlic minced
  • 1/4 cup unsalted butter
  • 1/2 cup grated Parmesan cheese

  • 2 tbsp chopped fresh parsley
  • Red pepper flakes

Instructions
 

  • Step 1: Get your cooking surface hot. Fire up your griddle or place a large skillet on your stovetop over medium-high heat. Add a little bit of oil to coat the surface.
  • Step 2: Season the chicken. In a medium-sized bowl, toss the cut chicken pieces with the 2 tablespoons of olive oil, garlic powder, onion powder, paprika, salt, and pepper until nicely coated.
  • Step 3: Cook the chicken. Spread the seasoned chicken in a single layer on the hot, oiled surface. Cook for about 6-8 minutes, flipping occasionally, until beautifully browned on all sides and fully cooked through (internal temperature 165°F / 74°C).
  • Step 4: Make the garlic butter. Slide the cooked chicken to one side. On the empty side, add the butter and let it melt. Add the minced fresh garlic and sauté for just 1-2 minutes until fragrant. Be careful not to burn the garlic.
  • Step 5: Combine. Push the cooked chicken back into the melted garlic butter. Toss to make sure every piece is coated.
  • Step 6: Add the Parmesan. Sprinkle the grated Parmesan cheese evenly over the chicken. Toss everything together one more time until the cheese melts slightly and clings to the chicken.
  • Step 7: Finish it off. Remove from heat. Transfer to a serving dish and sprinkle with fresh chopped parsley and optional red pepper flakes.

Notes

This recipe is super flexible! Try different proteins like shrimp or steak bites, or add veggies like broccoli or bell peppers alongside the chicken. You can swap Parmesan for Pecorino Romano or stir in a splash of heavy cream for a creamier sauce. A squeeze of lemon juice can add brightness.
For best results, don't overcrowd the griddle/skillet when cooking chicken, ensure the surface is properly heated, and watch the garlic carefully so it doesn't burn. Using fresh garlic and good quality Parmesan elevates the dish.
You can prep the chicken ahead of time by cutting and seasoning it. Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the griddle, skillet, or in the microwave.
