Ingredients
  

For the Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar

For the Filling

  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Coloring

  • gel food coloring pastel pink, blue, yellow, and green

Instructions
 

  • Step 1: Preheat your oven to 325°F (163°C).
  • Step 2: Make the crust by combining graham cracker crumbs, melted butter, and granulated sugar in a mixing bowl. Stir until the crumbs are evenly coated and press firmly into the bottom of a 9-inch pie dish. Use the bottom of a glass or measuring cup to pack it down tightly.
  • Step 3: Bake the crust for 8–10 minutes. Remove from oven and let it cool completely before adding filling.
  • Step 4: Prepare the filling by beating softened cream cheese with granulated sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream until fully combined and smooth.
  • Step 5: Divide the filling evenly into four small bowls. Add a few drops of pastel gel food coloring to each bowl (pink, blue, yellow, green) and stir gently to color evenly.
  • Step 6: Spoon colored fillings onto the cooled crust in alternating dollops. Use a toothpick or skewer to gently swirl the colors together to create a marbled Easter effect. Be careful not to over-mix.
  • Step 7: Bake the pie for 35–40 minutes until the filling is just set in the center but still slightly jiggly.
  • Step 8: Turn off the oven and leave the pie inside with the door slightly open for 15 minutes to cool gradually.
  • Step 9: Chill the pie in the refrigerator for at least 4 hours or overnight before serving.

Notes

Make a no-bake version by refrigerating the pie without baking. Swap crust for Oreo crumbs for a chocolatey twist. Try fruit purees for natural swirls. Store leftovers covered in the fridge for up to 4 days. Avoid freezing to maintain texture.
